BBQ Chicken and Mushroom Patties

Ingredients
500g Steggles Chicken Mince
1/2 Cup Dried Breadcrumbs
1 Medium Onion, Chopped
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
2 Tablespoons Lemon Juice
2 Tablespoons Chopped Parsley
1/2 Cup Mushrooms, Chopped
Vegetable Oil

Instructions
Place chicken mince in a large bowl and add all ingredients except for oil. Mix well to combine ingredients, then kneed a little with one hand to make the mince fine in texture. With wet hands, shape into 4 or 5 patties.

Heat Barbecue Or Grill
Preheat to medium-high, oil the grill bars or rack with a little vegetable oil and place patties on. Cook for 8 minutes one each side or until cooked through. To test if cooked, pierce patties with a skewer and juices should run clear.

Serve hot with vegetable accompaniments

Tip: For quick preparation, place onion, parsley and mushrooms in a food processor and chop together.
