Chicken and Mediterranean Vegetable Stacks

Ingredients
4 chicken breast fillets
12 slices eggplant cut in circles
Baby rocket leaves
Red & yellow capsicum
2 tablespoons store bought pesto
Instructions
Place capsicums in a hot over until skin blisters. Remove from oven and place capsicums in a plastic bag to cool. Peel skin off capsicums and slice into thin strips.
Grill the chicken & deep fry eggplant till crispy. Slice the chicken & arrange rocket in centre of plate. Stack the chicken, eggplant, capsicum strips, followed by more chicken & top off with pesto.
