Chicken Meatball

Ingredients
400 g Chicken mince
1 Egg, beaten
1 cup Soft white breadcrumbs
1/2 tsp Grated lemon rind
1 Tbsp Lemon juice
1/2 tsp fresh thyme leaves
1 Clove garlic, crushed

Instructions

Combine mince with egg, crumbs, lemon rind and juice, thyme and garlic, mix well then season with freshly ground salt and black pepper. Roll into small, bite size balls. Place in a single layer in an oiled baking tray and bake in a hot oven for 20 minutes or until cooked through.

Serve with salad and whole egg mayonnaise.
