Ingredients
1kg Steggles Chicken Drumsticks
2 tablespoons curry paste
2 cups vinegar-flavoured corn chips or potato crisps
Boiled rice or salad
Mild chutney for serving
Instructions
Rinse drumsticks and pat dry.
With fingers rub the curry paste well into the skin of the drumsticks. Crush the corn chips or potato crisps and press onto drumsticks.
Place on a rack over a shallow baking tray and bake in a preheated oven 180°C for 35 to 40 minutes.
Serve hot with boiled rice and a portion of chutney on the side or serve cold with your favourite salad.
Tip: A shallow dish is recommended as it aids the crisping process.
