Delicious Italian Chicken Legs

Ingredients
3 tablespoons olive oil
8 chicken legs (drumstick and thigh)
1 medium-size onion, cut into thin rings
12 large cloves garlic, halved
1 can diced tomatoes
¼ cup anchovies, drained and chopped
1/2 cup pitted black olives
1/3 cup capers, drained
3 tablespoons coarsely chopped sun-dried tomatoes
1 tablespoon fresh mixed Italian herbs
1 tablespoon balsamic vinegar
Pinch cayenne
Salt and freshly ground black pepper
Instructions
Heat the oil in a large fry pan, add the chicken and brown on both sides. Remove chicken from pan and set aside.
Add onion and garlic to pan and gently fry until the onion is soft. Stir in the tomatoes with juices and then the remaining ingredients.
Return chicken to the pan and coat with the sauce. Cover the pan and simmer for 4-5 minutes until the chicken is tender. Serve immediately.
