Easy Apricot and Mango Chicken Loaf

Ingredients
700g Steggles Chicken Mince
1 cup fresh breadcrumbs
3/4 cup spring onions, chopped (including green part)
1 tablespoon finely
Chopped parsley
2 tablespoons dried apricots, dried
1 tablespoon mango chutney
1 egg
1 teaspoon salt
1/4 teaspoon pepper
Oil for greasing
Instructions
Place chicken mince in a large bowl. Add all remaining ingredients. With your hand, mix and knead mixture for 2/3 minutes to combine ingredients well and to give a fine texture.
Grease a 22 x 8 x 5cm/9 x 3 x 2in loaf tin with oil. Pour in the mince mixture. Place in a preheated oven 180°C for 50 to 55 minutes. To test insert skewer into centre if clear juice appears it is cooked. If juice is a pink colour further cooking is required. Rest in tin 10 minutes before serving.
Serve hot with vegetable accompaniments or cold with salad.
