Lemon Roasted Turkey Breast

Ingredients
1-1/2 Cups fresh continental parsley
2 Tablespoons English walnuts
1 Tablespoon olive oil
2 Tablespoons fresh lemon juice, divided
1/2 Teaspoon lemon peel or zest, freshly grated
1.3kg Turkey Breast, halved
To Taste salt and freshly ground pepper
For Garnish lemon slices and fresh basil leaves

Instructions
Preheat oven to 170°C.

Place parsley, walnuts, olive oil, 1 tablespoon lemon juice and lemon peel in food processor or blender. Process until well blended.

Gently loosen skin from turkey. Spread basil mixture underneath skin. Pour remaining tablespoon lemon juice over turkey, sprinkle with salt and pepper.

Roast in baking pan, loosely covered with foil, basting occasionally for 35 minutes. Uncover and roast until browned, basting occasionally with pan juices. Cook for 40 to 60 minutes until the internal temperature reaches 75°C.

Garnish with lemon slices and extra parsley.
